What I Eat In A Day Whilst Travelling (Vegan)

Hi all!

I thought I would share another What I Eat In A Day post, whilst travelling throughout Queensland and Northern NSW. On the 6th October, I went on a road trip with my Mum from the Gold Coast to Crystal Castle (see Crystal Castle – Photo Diary) and then down to Byron Bay. All of the food I ate was 100% vegan. I hope you enjoy!

BREAKFAST

We stayed at the Royal Palm in Coolangatta. It was a beautiful apartment, right on the beach. I loved falling asleep to the sound of waves crashing and waking up with an ocean view. That particular morning, I ate 1 cup of oats mixed with a splash of Bonsoy, blueberries and cinnamon on top. Delicious and filling. Every other morning, we ate acai bowls from a cafe down the road. I could seriously live off them!

LUNCH

For lunch, we ate at the Crystal Castle restaurant, overlooking the beautiful, lush trees. I ordered the Gado Gado (made vegan), which contained lots of fresh veggies, marinated tofu, bean sprouts and a yummy peanut satay sauce. It was so good!

AFTERNOON HOT BEVERAGE

In the afternoon, we made our way to Byron Bay. It is such a quirky, ‘surfy’ town, full of vegan restaurants and new-age stores. After some shopping, we stopped at Combi, a cafe with lots of plant based options. I ordered the Turmeric Latte, which was made with cashew milk, turmeric, black pepper and coconut nectar. Super tasty.

DINNER

For dinner, we ate at The Beet, a 100% plant based restaurant. I ordered the delicious GF Beet Burger, that came with sweet-potato chips and vegan aioli. The patty itself was made from beetroot, quinoa and soy. It was topped with lettuce, sauerkraut, roasted pumpkin and tomato relish. Insanely good!

  1. I love gado gado! It was a dish my friends loved a lot and we shared that dish a lot when I lived in Singapore. The burger and sweet potato chips look soooo good! Haha, your mum must have loved the chips. If I was there she could have had my share too 😀

    1. All of the food was so tasty and delicious! 🙂 I would love to visit Singapore again as an adult (I’ve only been as a child) and explore what vegan foods they have on offer. Hope you and Chewy are well my friend xoxo

    1. Oh wow! I have never been to NZ despite living only 3 hours away. My husband and I visited California and San Fran in 2014. It was really fun!
