Today I am back with another super simple recipe that has a vegan twist on an old party favourite of mine. Did you ever eat Honey Joys as a child? Well, yesterday, I made Maple Joys! I bought them to my friend’s house for dinner and they were a big hit. They are so easy to make and very delicious. You should also know that they are gluten, nut, grain and wheat free. Here are the ingredients you will need and the method to follow:
INGREDIENTS
– 4 cups of Corn Flakes
– 2 tablespoons of Maple Syrup (or plant-based sweetener of choice)
– 1/2 a cup of plant based margarine (or coconut oil)
– Patty Pans (cupcake holders)

METHOD
1.) In a large saucepan, melt your ‘butter’ and maple syrup, until it starts to boil
2.) Turn off the heat and add your Corn Flakes
3.) Place patty pans on a cupcake/muffin tray. Stir mixture well, then spoon into patty pans
4.) Bake at 150C/300F for 10 minutes or until slightly golden
5.) Allow to cool so the mixture stays together. You can store these in an airtight container for a week. Enjoy!

VERDICT
This recipe made nine, which was a good amount for our small dinner. They were super soft, gooey and crunchy at the same time. I will definitely be making them again in the future. They are a great vegan alternative for children to take to a party or just as a fun treat.
