My Vegan Winter Warmer Recipe!

Hi all! 

It is currently winter in the Southern Hemisphere and Melbourne is super cold. At this time of year, I gravitate toward warmer, heartier meals like soups, stews, curries and more. Last month, I discovered a new recipe that became an instant favourite. It is a vegan ‘sausage’ casserole, with mashed potatoes and steamed broccoli. Francis and I love it so much, I wanted to share it today. It is extremely easy to make, delicious and full of goodness! Here is what you are going to need: 

INGREDIENTS 

– 1 large broccoli

– 3 potatoes 

– 1 cup soy milk (or plant milk of choice) 

– A sprinkle of rosemary 

– 1 packet of veggie sausages 

– 3 stalks of diced celery 

– 1 chopped onion 

– 1 large diced carrot 

– 1 cup of sliced mushrooms 

– 1/2 tbs oil 

– 1 1/2 tbs minced garlic 

– 1 tin of diced tomatoes 

– 2/3 cup of vegetable stock (200 ml) 

– 2 tbs tomato paste 

– 2 tbs balsamic vinegar 

– A dash of smoked paprika, black pepper, salt and dried oregano

METHOD

1.) Peel and cut potatoes into halves or quarters. Place in a small saucepan, add a sprinkle of salt and allow to boil. 

2.) Cut your broccoli into florets and steam. 

3.) In a large saucepan, on medium heat, add the oil, plus your diced celery, carrot, onion, mushrooms and garlic. Stir until veggies begin to soften. 

4.) Once potatoes are soft, drain and place back into saucepan. Add soy milk, rosemary and mash with a fork, until smooth and creamy. Set aside on a plate, alongside the steamed broccoli. 

5.) In the large saucepan, add the remaining ingredients (veggie stock, diced tomatoes, tomato paste, balsamic vinegar and spices). Stir until everything is mixed in. 

6.) In a separate pan (or oven depending), cook sausages according to packet instructions. Once cooked, cut into pieces and add to large saucepan. Mix through. 

7.) Serve up alongside mashed potatoes and broccoli. Enjoy!

  1. It looks like such a good recipe, one of fresh and natural ingredients! I love broccoli and these days have bee eating it twice for dinner. Not a huge fan of stocks. If I ever need stock for a meal, I like to homemake them but sometimes it can take so long lol. Hope all is well with you my friend 🙂
