Today I am sharing my 14th re-creation. Using a number generator, I landed on page 61 of The Global Vegan and the result was a recipe for Smashed Avo & ‘Feta’ On Toast. Check out the menu category to see my past attempts. Without further ado, let’s get into it.
SMASHED AVO & ‘FETA’ ON TOAST – THE RECIPE
INGREDIENTS
– 1 large Avocado
– 2 tablespoons of freshly squeezed Lemon Juice
– A tsp of Sea Salt & freshly ground Black Pepper
– 1 tsp of Extra-Virgin Olive Oil
– 3 tablespoons of Vegan Feta (homemade or store bought)
– 4 slices of Sourdough Bread, toasted
– Chilli Flakes, to serve (optional)
METHOD
1.) Place the avocado, lemon juice, salt, pepper and olive oil in a bowl. Mash together, keeping it moderately chunky. Fold through the feta.
2.) Scoop the smashed avo and feta onto your toast and sprinkle with extra salt, pepper and chili flakes, if desired.
SMASHED AVO & ‘FETA’ ON TOAST – THE RESULT
I’ll be honest. This was not the recipe I landed on for the month. I was supposed to make Amaranth Black Bean Burgers, but aside from the fact that I couldn’t find Amaranth anywhere, I also tested positive for Covid. I ended up making things easier for myself, by choosing quite a simple recipe. The recipe in the book suggested homemade feta but I went with the store-bought, Bio Cheese option. It was very delicious and full of flavour. I would absolutely make it again. The perfect go-to idea for lunch!
